Professor Jens Walter serves as the Professor of Ecology, Food and the Microbiome at University College Cork, where he is a Principal Investigator at APC Microbiome Ireland. His research examines how diet and microorganisms shape the gut microbiome and human health, translating ecological principles into probiotics, synbiotics and nutritional strategies. He has published more than 200 scientific papers and led the development and clinical evaluation of the NiMe® Diet.
